Very chocolately chocolate brownies which are great on their own with a cup of tea or coffee but make a fab dessert if served with vanilla ice cream.

chocolate chips

Barbecued Lamb Skewers

Marinate the meat in the morning (or day before) and barbecue in the afternoon or evening, at the same time soak your skewers in water.  This recipe also gives the hidden secret of how to make the perfect cous cous.

Pesce Bavettine

Roast Brisket with Garlic & Rosemary

A wonderful alternative to a Sunday roast and easier on the wallet. Prepare in advance, pop in the oven whilst you have a lunchtime tipple and fill the house with wonderful aromas. Serve with new potatoes and peas. Couldn’t be easier!

Fresh ingredients:

stewing steak
onions
carrots
garlic
rosemary
butter

Store cupboard:

Flour
Worcestershire sauce
Dijon mustard
beef/chicken stock
red wine

Venison Meatballs with Creamy Pasta

A quick and easy supper dish using venison which is lower in fat than beef – so good for the waistline! (Sainsbury’s often have venison steaks which you can whizz in the blender).
Serve with pasta tossed in cream and a teaspoon of dijon mustard. Yum!

Venison mince
eggs
streaky bacon
sage leaves
garlic
cream

Smoked and fresh fish lasagne

This wonderful twist on the traditional lasagne combines smoked haddock, smoked salmon, fresh salmon and prawns. But you could use a combination of white fish and either smoked haddock or smoked salmon to get that lovely rich flavour.
